Fajitas

Fajitas


This week, I have decided to go back to Mexican cuisine for everyone's favourite,  fajitas! Fajita's are simple and easy to prepare and like my previous blogs, are easy to adapt for a range of diets and preferences.  Because of this, fajitas are a great dish to cook for others as they have a variety of toppings which guests can add as they please meaning its a winner for even the fussy eaters! 



I went with the classic chicken fajitas and have included the recipe below however feel free to substitute the chicken for extra veg or another meat of your preference.  This week I purchased the ingredients at Tesco as they have a club card offer on chicken breasts.  All of the ingredients cost around £8 (not including the toppings) and serves 4 which comes out to £2 a serving. 

In the quesadilla recipe, some people in the comments had asked about which specific seasoning to use for the chicken.  For this dish I used the ‘Smoky’ chicken mix from Tesco's own brand.  While the branded mixes are still good, I actually find Tesco's own to be better and cheaper. 



Ingredients 

For the mix: 

  • 3 bell peppers 

  • 2 onions 

  • 950g chicken breast 

  • 50g chicken seasoning mix (store-bought or pre-made) 

Optional toppings: 

  • Salsa 

  • Guacamole 

  • Sour cream 

  • Grated cheddar cheese 

  • Jalapeños 

 

Method 

  1. 1. Prepare the chicken: 

Chop the chicken breast into bite-sized pieces and rub with the chicken seasoning. 

Let the seasoned chicken rest in the fridge while you prepare the vegetables. 

  1. 2. Prepare the vegetables: 

Chop the bell peppers into small pieces and slice the onions. 

  1. 3. Cook the chicken and vegetables: 

Heat olive oil in separate pans over medium heat. 

Fry the chicken until crispy on the outside and fully cooked through (white in the middle). 

In another pan, fry the onions and peppers for about 10 minutes, or until the onions begin to brown. 

  1. 4. Serve: 

Serve the chicken and vegetable mixture with tortillas and your choice of toppings.
