Quesadillas are one of my favourite
quick dishes for one main reason. They are a great way to use up leftover
ingredients as there is no wrong answers when it comes to. From breakfast
themed meals to late night snacks there is always a different way to make
quesadillas. For this post I have used my own recipe (Below) for a
classic chicken and pepper quesadilla. The recipe is quick and easy to
follow and is perfect for a fridge clearing meal when you can’t get to the
shops!
Another reason that quesadillas are one of my favourite quick meals is that like a curry, it is super easy to add in your own twist or take ingredients out you aren’t keen on also giving the option to make the recipe vegetarian or vegan.
The ingredients for this recipe cost me £5 from Aldi and the recipe makes enough for 3 quesadillas bringing the cost of each meal to £1.67. Ready to try the recipe

Ingredients:
- 1 large chicken breast
- 1 red pepper (diced)
- Chicken seasoning pack of choice (store bought or
home made)
- 50g of cheese (grated)
- 1/2 diced onion (Red or white)
Method:
- Chop the chicken into small chunks and season in a
mixing bowl. Refrigerate to marinate.
- Fry the onions and pepper in a pan for about 5
minutes, or until softened and cooked through.
- Cook the chicken in the same pan until fully
cooked, then break it into smaller chunks.
- Assemble the quesadilla: Place a tortilla in the
frying pan over low heat. Add a layer of cheese, followed by the cooked
onions, chicken, and peppers. Let the tortilla cook until slightly crispy.
- Top with another tortilla, then use a spatula to
flip the quesadilla carefully.
- Cook the second tortilla to the same level of
crispness as the first. Remove from the pan and cut into slices, like you
would with a pizza.
